Type: condiment produced from unfermented white grape must; the fact that it comes from grape juice and not from wine – unlike normal condiments based on wine vinegar – leaves it with a pleasantly sweet and sour taste, with aftertastes and nuances coming from the various woods in which it matures. The unfermented must is cooked slowly in a bain-marie and enriched with centuries-old balsamic ferment cultures, according to the traditional procedure. Aging in barrels of different essences accentuates its concentration and aromas. The fact that it comes from grape must and not from wine (unlike normal condiments based on wine vinegar) leaves it with a pleasantly sweet and sour taste, with aftertastes and nuances coming from the various woods in which it matures. Ingredients: cooked grape must, wine vinegar (contains sulphites). Pairings: an excellent condiment for salads and meats, both white and red, to be used always raw. It also lends itself to "bold" experiments on ethnic dishes.
