Typology: The Leccino is one of the most common cultivars in Umbria, characterized by a vigorous canopy and an intense green color. The fruits are elongated and can reach significant sizes. Taste: The Monocultivar Leccino is an oil with a light fruity taste and a predominantly vegetable flavor, with hints of ripe almond, artichoke leaf, and endive. In taste, a strong bitter chicory opens up to a medium-intensity growing spiciness. The color is green with golden reflections. Pairings: an oil that stands out for its delicacy and versatility: ideal with boiled chicory, red meats, hunter-style stew, and green salads. Pleasant when paired with panzanella, a typical dish of the peasant tradition of central Italy. Usage advice: to season cold and hot dishes with a medium-intensity structure.
