Type: cheese with a strong and harmonious taste with a prevalence of sweetness, while on the nose the aromas are reminiscent of dried fruit and hay freshly mowed. Produced with pasteurized whole cow's milk, kid's rennet paste and partial cooking of the freshly produced curd, these are the pre-requisites for maturing this cheese for a few months in conditioned cells or caves. Inedible rind. Ingredients: pasteurized cow's milk, rennet, salt, lactic ferments, Flea Bastola beer.
