The cured Norcia IGP ham is produced in the area which includes the municipalities of Norcia, Cascia, Preci, Poggiodomo, Monteleone di Spoleto at an altitude of over 500 metres, as these are the best climatic conditions for the production process which goes from salting to seasoning. Prosciutto di Norcia PGI has a typical, slightly spicy aroma while the flavor is sapid but not salty. The best way to savor it is to cut it with a knife.
