«Valnerina is a rugged and wild land full of woods and pastures; in the past sheep farming was one of the main activities of the local economy. The herds of sheep and goats were part of the agricultural activity in every family and, in the summer, flocks from other regions also arrived on the pastures of the plateaus. On the other hand, the inhabitants of Valnerina moved further downhill from September, towards the plains and pastures of Lazio, where the climate was milder. The return to high altitude took place at the beginning of the following summer. During the transhumance, the products of sheep's milk processing (cheese and ricotta) had to be transported and stored. Part of the ricotta was an ingredient in the traditional dish or scotta, a bread and whey soup with fresh ricotta. The remaining part was instead placed in a hemp sack, squeezed to eliminate the liquid part, salted and left to dry hanging in the cellar or in the cheese maturing rooms. In this way, ricotta salata was born, with its typical pear shape due to the canvas bag, wide at the base and narrow at the entrance. A traditional variant involves covering the ricotta not only with salt but also with bran or wild herbs which favor the natural preservation process of the product. The maturation phase of the product can range from 15 days up to 5 months. Ricotta salata has a weight ranging from 500 grams to one kg, has no rind, has a white and compact texture. After maturing for a few days, it is ready to be eaten as it is, excellent seasoned with extra virgin olive oil and pepper. The seasoned product, on the other hand, is eaten grated over pasta, soups and Umbrian acquacotta (a soup with stale homemade bread, soaked in a tomato soup, onions and a touch of mint)» (Slow Food Italia< /em>).
