«The peculiarity of black celery from Trevi is its length, it can measure up to one metre, the dark green ribs, the scent and the absence of strings. According to the Trevi tradition, the very small black celery seeds are planted on the day before Easter and are left to germinate until the plant reaches a height of thirty centimetres. From this moment on, a progressive topping-up is carried out with extreme care, still mostly manual today, which allows for large ribs with an intense and captivating color and aroma immediately after the summer. Trevi black celery, grown in the area since the 17th century, is one of the six Slow Food Presidia in the region.
