"Until the fifties, the cultivation of this delicious legume was carried out by almost all the farming families of the Lake Trasimeno area. Over time, due to a very demanding production (still entirely manual, from sowing to threshing), this cultivation was replaced with that of "American" beans, much more productive.
In the early nineties this traditional Umbrian agri-food product therefore risked disappearing. However, thanks to the collaboration between some farmers, the University of Perugia and the Province of Perugia, it was possible to relaunch its production.
The origins of the Fagiolina del Trasimeno (scientific term Vigna unguicolata), are to be found in distant Africa; in fact it arrived in Umbria spread by the peoples of the Mediterranean.
The sowing is done in spring and the long harvest by hand begins in June and continues until the beginning of October. The pods are then dried in the sun and then beaten with traditional peasant forks and sticks. The beans are then cleaned by means of sieves and at the end of the manufacturing process the beans are ready to be packaged in the characteristic hemp bags "(from La Fagiolina).
