Type: the definitive recognisability of the Suino della Marca is given by its coat, red with a white belt that completely surrounds the trunk at shoulder height. This animal derives from a very congenial cross that uses a native breed for its rusticity, the Cinta Senese, with high maternal aptitude, the Large White, and a terminal breed with adequate meatiness, the Duroc. The pigs are raised in the wild under a regime of animal welfare in the Umbrian countryside between meadows and woods, without the use of antibiotics from weaning. The guarantee of superior quality, a pig raised in freedom, eating natural food is able to offer a superior quality product because its diet is based on oak acorns, very rich in oleic acid, fruit and chestnuts. The production follows the typical Umbrian recipe that includes the addition of Cervia salt, pepper and garlic without the addition of preservatives and flavourings. The cured meats are aged using a natural method, obtaining a meat that stands out for its flavour and softness! Capocollo: the capocollo is stuffed into natural bovine casing, tied by hand and then aged for at least 120 days. Ingredients: Cinto red pork neck, salt, pepper, garlic, natural aromatic herbs.
