Type: Sagrantino is one of the most tannic varieties in the world and gives rise to wines with a very dark purple color, this is why the Tenuta di Saragano prefers a manual and late harvest for maximum maturation of polyphenols. The age of the vineyard destined for the production of Sagrantino is 40 years (first year of production 1954), after bottling the wine rests for a minimum of two years in the cave of a cave carved into the sandstone rock near the city of Todi, tunnels and niches today used for the natural maintenance of the wine in the bottle. Throughout the year, in fact, the cave guarantees the perfect environmental conditions for the stabilization and refinement of the wines, perfect conditions to predispose them to a long life but also to prepare them to give great satisfaction to those who will taste them. Production: 2050 bottles. Color: ruby red with garnet hues. Bouquet: on the nose it presents intense and refined aromas with notes of undergrowth, black cherry, blackberries, tobacco, and leather. Taste: the olfactory profile is full-bodied and elegant, tannic but soft, not loud where, with aristocratic complexity, fragrant flashes of black cherry, green undergrowth, humus, cigar box, incense, black pepper, eucalyptus, and cocoa are heard. Grapes: 100% Sagrantino. Pairing: it pairs perfectly with stewed and grilled red meats, game, to try with truffled lamb rack. Serving temperature: 18 °C.
