Color: intense straw yellow. Bouquet: intoxicating and with a good impact, delicately floral (jasmine, rose, and anise) reminiscent of exotic fruits less nectarine, pineapple, and citrus, closing with Mediterranean hints. Taste: dry, voluminous and rich with a good returning of fruit in the mouth. The wine shows a fun dynamic balance thanks to the traditional almond finish of Grechetto, significant savoriness, and lively freshness. Grapes: 100% Grechetto. Pairings: at the counter: fried pecorino di Norcia; traditional pairing: cabbage soup with Pecorino del Subasio; fusion pairing: sashimi of tuna belly and Japanese amberjack. Serving temperature: 10-12 °C.
