It's not Easter without Easter cake! In fact, the presence of that sort of savory panettone whose production is such a real rite as to be blessed the day before in church together with hard-boiled eggs and cured meats is essential on the feast menu. Many variations depending on the latitude of the region, but which also has some constants: eggs, flour, extra virgin olive oil, cheese, pecorino, pepper and salt, for purists even a little lard. But now it is eaten all year round and is also part of the appetizers for special occasions or in restaurants, but the Easter cheese cake - a food that in Umbria completely represents Easter - is traditionally eaten on Easter morning at breakfast together cured meats such as: Capocollo, Salame Nursino, Lombetto, hard-boiled eggs and Vernaccia di Cannara, a raisin wine produced with Cornetta grapes; once it was the lamb cooked in the oven that was accompanied by Easter cake... always for breakfast!
