«From ancient origins, Torta al Testo was born as an unleavened alternative to bread. Typical of the Perugian tradition, it has been made in homes since ancient times and is a flatbread of flour, water, olive oil, a pinch of salt and, if you want it to swell a bit, a pinch of bicarbonate or brewer's yeast . In the beginning there were two variants: that of wheat, more popular, and that of corn, consumed by wealthy families. Torta al Testo has always been the true queen of the Umbrian table. Cut into wedges, instead of bread, it is used above all to accompany dishes rich in sauce, such as meat alla cacciatora or all'arrabbiata, such as the typical Friccò, chicken cooked in a pan with a sauce (...). A curiosity: the magnificent Fontana Maggiore in Perugia, the work of Nicola and Giovanni Pisano (13th century), in the month of January depicts a woman sitting in front of the fireplace with two focaccias in her hand.
