«It was the year 1540 when, throughout the Papal States, the Pope imposed a "very salty" tax on salt. Perugia rose up and thus the Salt War was born. The Umbrian city was eventually defeated, but since then bread has been eaten without salt throughout Umbria. This thesis, too, has been questioned by most historians: bread without salt, in fact, is widespread throughout Umbria and not only in the Perugino area, which was a separate territory (and even a dialect) Spoleto, Todi, Terni and Foligno» (...)
